Tonight, Chad fixed dinner fit for a king! Yes, Chad fixed the whole dinner all by himself and it was more than delicious...whatever that word may be, maybe scrumptious, or
delectable or heavenly. Anyway, he went to Whole Foods and got everything he needed, all fresh and organic and yummy.
To start we had a tomato, fresh mozzarella and basil salad. It was topped with Greek seasoning, a smidge of olive oil and a touch of balsamic vinegar. It was so fresh and so cold! YUM YUM YUM!
Then for our main course, he grilled. And, oh did he grill! We had grilled yellow squash,
ribeye steaks and grilled
portobella mushrooms. The steaks were topped with melted
gorgonzola cheese, finely chopped
portobella mushrooms and a blackberry wine reduction. Hello?!? I had no idea he knew how to make a reduction, actually I had no idea how to make a reduction! Everything was so incredible!
We had so much food left over, we'll be eating this for days. Sorry to those of you who freak out about leftovers, but this was not going in the trash!
Thanks Chaddy P. for an awesome dinner. We were so stuffed, there was no room for dessert, we just had coffee instead!
Tomorrow of course is Easter and after mass, we'll be celebrating at my mom and dad's house. We're celebrating my
bday at the same time too! This year I got to pick out my own cake with whatever I wanted on it, I haven't done that in years! So, I went to Merritt's, told them what I wanted, and here's what they came up with...
It's perfect, exactly what I wanted! Since we're going on a cruise for my
bday I thought it'd be fun to do a tropical cake. Merritt's did a great job!
Happy Easter everyone!
